If you’re a devoted chocolate fan (as I am), then this gluten free chocolate mug cake is just what you need in your life! An individual dessert made just for one (no sharing required!)
Similar to my chocolate lava mug cake, but made for those who follow a gluten free diet, this mugful of gooey chocolate cake will satisfy any chocolate cravings when they hit!

What You Need
Gluten free chocolate mug cake uses the basic baking staples of butter, sugar, cocoa, chocolate and gluten free self raising flour – that’s it!

- Butter – softened to room temperature. Use real butter, salted or unsalted, rather than a butter substitute such as margarine.
- Boiling water.
- Cocoa powder – it’s important to use a good quality baking cocoa powder for a superior intense chocolate flavour, so pick a well known brand such as Cadbury or Nestle made with 100% Dutch cocoa.
- Caster sugar – this superfine sugar dissolves easily with the other ingredients.
- Gluten free self-raising flour – I find the White Wings brand is very good.
- Dark chocolate – melts, or squares from a block of chocolate. Once again, for the most intense chocolate flavour use a quality brand of baking chocolate.
Equipment Required
All you need for this gluten free chocolate mug cake is a large mug or ramekin, a spoon, and a microwave!
Step By Step Instructions
This gluten free mug cake is made in 3 easy steps, and 2 minutes!

Step 1 – Melt The Butter
Place the butter into a large mug or ramekin and pour over the boiling water. Stir until the butter has melted.
Step 2 – Add Dry Ingredients
Add the cocoa powder, caster sugar and gluten free self raising flour to the mug, and mix ingredients together until the mixture is smooth.
Step 3 – Add Chocolate And Bake
Press the chocolate melts or squares into the centre of the mug.
Place in the microwave for 1 minute on high. The cake should be cooked on the top while staying slightly gooey in the centre.
If you think it’s still a little undercooked (all microwaves are different), cook for a further 10 – 50 seconds on medium, in 15 second bursts.
Serve mug cake whilst it is warm, adding a spoonful of ice cream or dollop of cream (optional but highly recommended!)
Expert Tips
This gluten free chocolate mug cake truly is as easy as 1,2,3!
- Gluten free self raising flour – I used White Wings gluten free self raising flour, but you can use any brand of gluten free self raising flour that you like.
- Cooking time – microwaves vary in their power levels, and therefore cooking time can vary for this mug cake. I recommend cooking your mug cake for 1 minute on full power to start with. However if you think it’s still a little undercooked, then cook for a further 10 – 50 seconds, in 10-15 second extra bursts on medium, if required.
- Don’t overcook the mug cake! – you want it to still be slightly gooey in the middle. Stop cooking once the cake is cooked on top.
- Watch the mug cake – watch it carefully in the microwave to make sure it doesn’t overflow.
- Make 2 portions – you can make this mug cake in two smaller mugs or ramekins rather than 1 large mug/ramekin if you want 2 serves.
FAQ’s
To ensure your mug cake doesn’t overflow, make sure you use a large mug or ramekin as the self raising flour will expand the mixture, causing it to rise.
Alternatively, make 2 portions in smaller mugs, however you may need to decrease the cooking time.
Overmixing the batter, overcooking the mug cake, or cooking at too high a temperature are all ways that can make your mug cake a little hard or rubbery.
Mix ingredients until just combined and no lumps remain.
As power levels vary between microwaves, I recommend you start with one minute on high power. If your mug cake is a little undercooked after one minute, then reduce the temperature to medium power and cook in 10-15 second bursts just until the top is cooked whilst the inside is still a little gooey.

Instructions
