How to Make Saltine Cracker Salad
This simple southern dish is effortless to make with only a few ingredients. Using a sharp knife, seed and chop a large tomato and place it in a medium bowl. Add coarsely crushed saltine crackers, mayonnaise, chopped hard boiled egg, and chopped green onions to the bowl with the chopped tomatoes and stir well. Season with kosher salt and black pepper, to taste.

- I use a sleeve of Saltines. You can substitute Ritz crackers.
- Make sure to use a high-quality mayo such as Dukes Mayonnaise or Hellman’s.
- I use ripe summer tomatoes. You can substitute cherry tomatoes.
- How do you seed tomatoes? Start by giving your ripe tomatoes a good rinse to get rid of any dirt. Slice them in half across the middle (not from top to bottom). - 1 large tomato finely chopped
- 1½ cups mayonnaise
- 1 sleeve saltine crackers crushed
- 1 large hard boiled egg finely chopped
- 1 green onion chopped
- salt and pepper to taste
