Ingredient notes

Use a hot buckwheat cereal like the ones offered by Bob’s Red Mill or Pocono. Do not use buckwheat groats since they won’t soften.

Quick-cooking oats are best. If you use regular old-fashioned oats you will need to let it chill longer. Do not use steel cut oats.

Dairy-free almond milk keeps these overnight oats from going bad if a container is left outside the refrigerator for an hour, but you can also use other non-dairy milk such as oat milk or coconut milk. Non-vegans can use plain old cow’s milk, but you’ll need to keep the oats chilled until right before eating. 

How to make the best overnight oats

To prepare the copycat Brekki Overnight Oats recipe:

  1. Pour the almond milk, vanilla extract, and maple syrup into the blender. Adding the liquids first ensures better results. 
  2. Add the rolled oats, buckwheat cereal, cinnamon, and salt to the liquids.

Variation ideas 

This recipe is for the Cinnamon Vanilla variety, but there are lots of other options you can prepare, like:

  • Berries. Use your favorite type of berry-based jam in this recipe. Strawberries, blueberries, and raspberries all work well. Just leave out the cinnamon and maple syrup in the recipe above and add a layer of jam at the bottom of the jar. If you want, you can add some berries to the Overnight Oats before chilling. 
  • Bananas, Walnuts, and Maple. Replace the chopped almonds with walnut pieces. Dice a fresh banana and add to the Overnight Oats after you pulse them. 
  • Apples and Cinnamon. This simple variation only requires adding some dried apple chunks to the blender before pulsing. The chewy, soft version of dried apples, like these from Nut Cravings, work the best here. 
  • Chocolate. Add a swirl of chocolate syrup or a sprinkle of chocolate chips on top of the oats after you put them in the jars. 
  • Nut butter. Stir in a spoonful or two of almond butter or peanut butter.

  • 1/4 cup quick-cooking rolled oats
