Ingredients

  • 16 oz breakfast sausage roll (*Note 1)
  • 1 lb potatoes, peeled and diced (*Note 2)
  • 1 small onion, diced
  • 1 red bell pepper, diced
  • 2 cloves garlic, minced
  • 6 eggs
  • ¼ tsp ground thyme
  • 1 cup shredded cheddar cheese
  • salt and black pepper, to taste
  • ¼-½ tsp optional: red pepper flakes

Instructions

  • Pre-heat a large skillet or cast iron skillet to medium heat.

  • Add breakfast sausage and cook until no longer pink, stirring occasionally. Use a wooden spoon to crumble the sausage as it cooks. Remove to a paper towel lined bowl. Set aside.

  • Drain all but 1-2 tbsp of the grease from the skillet. Add potatoes in a single layer and season with thyme, salt, and pepper. Cook, flipping occasionally, until fork tender (approximately 8-10 min).

  • Push potatoes to one side of the skillet. Add onion, bell pepper, and garlic to the other side. Sauté until softened (approximately 4-5 minutes).

  • Add the sausage back to the skillet and combine with the potatoes and vegetables.

  • Turn the heat to low. Use the wooden spoon to carve out 4 holes. Crack the eggs into the holes, sprinkle with salt, and pepper. Evenly sprinkle cheese over the top.

  • Cover skillet and cook until egg whites are set and cheese is melted. Garnish with green onion, salsa, and sour cream and serve.

Notes

Note 1 – You can use 8 sausage links (sliced) instead of ground sausage. 
Note 2 – Russet, Yukon and Red Potatoes all work here.
