I can’t have an Air Fryer series without a Fried Chicken recipe in it now can I? And so, here’s how to make finger-licking good Fried Chicken without the actual frying! 

Making the Air Fryer Crispy Chicken takes less than 30 minutes, which means it often features on our menu.  But it’s never boring because there are so many ways to serve it. In this recipe, I share my three favourite ways to turn this Air Fried Chicken into a wholesome meal. You haveee to try them all!!

Ingredients Overview

Chicken: cut into bite-sized pieces

Marinade:Marinate the chicken with whisked curd, garlic paste, schezwan sauce, lemon juice, oil, curry leaves, egg and basic Indian spices along with salt and pepper. 

Coating: Crushed cornflakes and some melted butter for greasing. No heaps of oil needed!

Why is my air fried chicken not crispy?

Make sure to not skip spraying the chicken with melted butter when flipping it in the air fryer – this will hydrate the chicken and make it crisp up.

Why is my air fried chicken not tender?

Letting the chicken marinate for 2 hours minimum is a must for tender air fried chicken.

Will this work in an oven?

You can follow the same temperature settings in an oven but note that it is really important to repeatedly flip and spray the chicken with butter, a hands-on approach which is easier to do in the air fryer.

How to store leftovers?

You can store leftovers in an airtight container in the fridge for up to 3 days.

Can I freeze air fried chicken for later?

Yep! You can freeze this chicken for up to 3 months in an airtight container.  

Richa’s Top Tips

  1. I like to use chicken thighs for this recipe because it’s a juicer cut. You could sub for chicken breast but note that the chicken will be slightly dry in comparison. 
  2. If you don’t have corn flakes on hand, you can use panko or regular breadcrumbs in a pinch. 
  3. You can reheat the chicken in the air fryer for 2-3 minutes at 180 degrees celsius to get it nice and crispy again.

Marinating chicken:

  • Add all ingredients for chicken marination except chicken to a bowl & whisk to combine well. Add chicken & mix well. Set aside for 1 ½ – 2 hours for the chicken to get marinated well.

    600 gms, 1 tablespoon whisked curds, 2 tablespoons garlic paste, 30 finely chopped curry leaves, 2 tablespoons finely chopped coriander leaves, 1 ½ tablespoons schezwan sauce, 1 teaspoon kashmiri chilli powder, ½ teaspoon black pepper powder, 1 ½ teaspoons salt, Juice of 1 lemon, 1 tablespoon cooking oil, 1 egg

Making fried chicken

  • Pre – heat air fryer to 190 C & brush the basket lightly with butter.

    2 tablespoons melted butter

  • Roll each piece of marinated chicken on the crushed cornflakes and make sure that the pieces are coated well.

  • Brush the air fryer basket with butter and place the coated chicken pieces with some gap between each other. Drizzle or spray melted butter on each piece.

  • Air fry chicken at 190 C for 5 minutes, flip them once, drizzle or spray butter and air fry at 190 C for 4 minutes. Air fry at 200 C for 3-4 minutes flipping once, till the chicken is fried to a golden brown.

  1. 3 suggestions for serving fried chicken: can be used as a patty in a burger, as a meal with mash & gravy or slice and serve with a salad.
  2. This recipe works best for boneless chicken thighs as they are tender & juicy which may be replaced with chicken breasts.
  3. Any cooking oil may be used in marination as per your choice, I have used groundnut oil.
  4. Do not skip marination time for chicken as it makes sure that it tenderises well.
