Easy Ground Beef & Egg Noodle Casserole

This Sour Cream Noodle Bake is the epitome of comforting, homestyle goodness. Tender egg noodles layered with a rich and savory meat sauce, all blanketed in a creamy combination of cottage cheese and sour cream. The flavors dance in harmony, creating a dish that’s pure comfort on a plate. Chicken Legs especially loved this. He has requested it again next week. I thought it tasted like a cross between lasagna and the Spasagna I made a while back. Either way, we both really enjoyed this! It has definitely earned a spot in our dinner rotation.

How to Make Sour Cream Noodle Bake

This beef casserole is super easy to make with only a few ingredients. Bring a large pot of water to a boil over high heat. Add the pasta to the pot and cook according to the package directions for al dente. Drain and set aside.

In a large skillet, cook ground beef over medium-high heat until no longer pink. Drain excess grease. Add black pepper, garlic powder, onion powder, salt, and tomato sauce to the pan. Simmer for 5 minutes.

In a large bowl, mix together the cooked pasta with cottage cheese and sour cream. Spread the noodles in a baking dish. Top the pasta layer with the meat sauce. Sprinkle shredded sharp cheddar cheese over the top of the casserole. Bake in a preheated oven until bubbly and the cheese is melted. Garnish with parsley and green onions.
