These muffins are super easy to make with only a few simple ingredients. Brown sausage in a large skillet over medium-high heat. Drain excess grease. Stir together sausage with eggs, milk, cheddar cheese, Rotel diced tomatoes and green chiles, onion powder, garlic powder, Bisquick, and shredded hash browns in a large bowl – season with salt and black pepper to taste. Spoon the batter into a muffin pan that has been sprayed with nonstick cooking spray. Bake in a preheated oven until set. Sprinkle with fresh parsley.

- 1 (10-oz) can Rotel diced tomatoes and green chilies, very well drained
- 1 cup Bisquick
- 4 large eggs, beaten
- 1½ cups shredded cheddar cheese
- ¼ cup milk
- 1 cup hash browns
