Beef
- 1 ½ pounds flank steak
- 2 tablespoons reduced sodium soy sauce
- ¾ teaspoons baking soda
- 1 cup cornstarch
- 2 tablespoons vegetable oil
- 1 cup diced yellow onion
- 1 cup diced red bell pepper
- 1 ½ teaspoons minced garlic
- 1 ½ teaspoons minced ginger
Sauce
- ½ cup water
- 4 tablespoons ketchup
- 2 tablespoons hoisin sauce
- ⅓ cup seasoned rice wine vinegar
- ¼ cup sugar
- 2 teaspoons cornstarch
- ½ teaspoon dried red pepper flakes
Instructions

Cut the flank steak against the grain into ¼ inch slices.

Place cut steak into a bowl with reduced-sodium soy sauce and baking soda. Stir to combine. Let the meat marinate for 30 minutes.

Make the sauce while the meat is marinating. In a small bowl combine, water, ketchup, hoisin sauce, seasoned rice wine vinegar, sugar, cornstarch, and dried red pepper flakes. Stir until well mixed.

Heat vegetable oil in a thick-bottomed pot to 350 degrees. Add enough vegetable oil, so the oil is about 3 inches deep.

After 30 minutes drain the beef of excess marinade. Add cornstarch to a bowl, and dredge the beef on both sides with cornstarch. Shake off excess.

Cook beef with vegetable oil in small batches until the beef is golden brown on both sides. This should take 3 to 4 minutes. Drain beef on a wire rack.

Heat a wok on high with a couple of tablespoons of vegetable oil you used to fry the beef. Saute onions, and red bell pepper, until they have softened. Add garlic and ginger and stir until fragrant.

Stir the sauce and add it to the wok. Stir a few times, then add cooked beef. Stir to coat the beef and vegetables with the sauce.
