This Protein-Packed Oatmeal Cookies recipe is a great way to satisfy your sweet tooth while getting a boost of protein.
Enjoy them with a cup of coffee or tea.
Ingredients
- 1 cup rolled oats
- ½ cup packed brown sugar
- ¼ cup unsalted butter, softened
- 1 large egg
- 1 tsp vanilla extract
- ¼ cup Biogen Complete, Vanilla flavour
- ½ tsp baking soda
- ¼ tsp salt
- Chopped nuts, chocolate chips, or dried fruit (optional)

Instructions
- Preheat your oven to 175°C. Line a baking sheet with parchment paper.
- In a large bowl, cream together the butter and brown sugar until light and fluffy.
- Mix wet ingredients. Beat in the egg and vanilla extract until well combined.
- Add dry ingredients. Stir in the oats, protein powder, baking soda, and salt until combined.
- Fold in your desired mix-ins, such as nuts, chocolate chips, or dried fruit.
- Drop rounded tablespoons of dough onto the prepared baking sheet, spacing them about 2 inches apart.
- Bake for 10-12 minutes, or until the edges are golden brown.
- Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
