Ingredients
Rolled oats are an excellent source of soluble fibre, particularly beta-glucan, and essential minerals, such as manganese, phosphorus, magnesium, iron, and zinc, all crucial for various bodily functions. A serving also contains a good amount of plant-based protein, aiding in muscle repair and satiety, and are rich in antioxidants, which help combat oxidative stress. Their complex carbohydrate profile ensures a slow release of energy, preventing spikes and crashes, making them an ideal food for sustained energy throughout the day.
Method
- In a large bowl, add the rolled oats, oat groats, buckwheat groats, pumpkin seeds, dried cranberries, and roasted almonds. Stir in the cinnamon, nutmeg, ginger, and a pinch of salt.
- Pour in the melted coconut oil and your sweetener of choice (syrup, honey, or another sweetener). Mix everything well until all ingredients are evenly coated.
- Scoop the granola mixture onto a parchment paper-lined baking tray. Spread it out evenly to ensure the clusters bake uniformly.
- Bake the granola in a preheated oven at 180°C (350°F) for 18-25 minutes, or until golden brown. Stir halfway through for even baking.
- Once baked, let the granola cool completely on the baking tray. Once cooled, store the clusters in a glass jar or an airtight container for up to 4 weeks.
