Create light and fluffy Protein Pancake Cups that are packed with flavour with this recipe.

Ingredients for the pancakes

  • 1½ cups oat or spelt flour
  • 1½ scoops Biogen Lean Whey, Vanilla flavour
  • 1 tsp baking powder
  • 1 tsp beetroot or berry powder (for a soft pink hue)
  • Pinch of salt
  • 1½ cups plant-based milk (add more if needed)
  • ⅓ cup liquid sweetener of choice
  • 1 tsp vanilla extract

  • Cream cheese or plain yoghurt, sweetened with honey
  • Fresh blueberries
  • Fresh mint

Instructions

  1. In a mixing bowl, whisk together the flour, protein powder, baking powder, berry powder, and salt. Add the plant-based milk, sweetener, and vanilla extract, stirring until you have a smooth batter.
  2. Heat a lightly oiled frying pan over medium heat. Pour 3-4 tablespoons of batter into the pan and cook for 2-3 minutes per side, until golden brown.
  3. Spread the cooked pancakes with sweetened cream cheese or yoghurt. Slice each pancake in half and fold them into mini taco-like shapes. Place them in a coffee cup, serving bowl, or jar.
  4. Top with fresh blueberries and mint for a beautiful and refreshing finish.
