Recipe Details

This Kompot recipe is so sweet and refreshing. This fruit drink originated in Eastern Europe and is a great way to use up fruit in a delicious way that the whole family will love. This drink is really versatile so you can add your favorite fruits, not just the ones I used.

  • TASTE: Sweet and a little tangy from the berries, this Kompot recipe has a crisp and refreshing flavor that is perfect for warm days.
  • TEXTURE: It’s filtered through a fine mesh sieve to keep it nice and smooth.
  • TIME: It takes just over an hour.
  • EASE: This is an easy recipe to make with just a few ingredients, fresh or frozen.

What You’ll Need

Ingredient Notes

  • Apples- Their juice is the base of the Kompot. I used cosmic crisp for their slight tartness, but you can use whichever type you like.
  • Raspberries, Strawberries, and Blueberries- Use fresh or frozen.
  • Sugar- This gives the drink its sweetness to counteract the tartness of the fruit.

Add-ins and Substitutions

  • Substitute the fruit- Try this recipe with apricots, peaches, rhubarb, plums, pears, blackberries, or sour cherries.
  • Use a different sweetener- If you prefer to avoid refined sugars, you can make this with honey, maple syrup, or agave syrup.
  • Add spices- Make this fruit drink with some cinnamon or allspice.
  • Use dried fruits- You can also use dried fruits to make this drink, with the water rehydrating them and extracting the flavor.

How to Make Kompot

  • Boil the apples. In an extra large stockpot, add 12 quarts of water and bring it to a boil. Then add in the sliced apples. Let the apples simmer in the boiling water for about 15 minutes. Then remove them from the pot.
  • Add the berries. Now add in the strawberries, raspberries, and blueberries. Let the berries simmer for about 20 minutes.
  • Add the sugar. Then remove the berries from the pot and stir in the sugar. No need to boil it as it is hot enough to dissolve the sugar.
  • Cool and strain. Let the compote cool completely, then strain it through a fine-mesh sieve and refrigerate in a covered pitcher or a few glass bottles.

Pro Tip: You may want to give the kompot a taste to see if it needs more sugar according to your liking. The tartness of your fruit will determine how much extra sugar you will need to add.

Recipe Tips

  • Slice the apples thinly- Doing this allows for surface area of the flesh of the apple to be exposed, letting more of the juices out.
  • Strain the kompot after cooking- Doing this takes out any pieces of fruit that are leftover from cooking, leaving you with a smooth and refreshing fruit drink.
  • Cover the kompot in the fridge- Keep the kompot covered with a lid to preserve freshness longer.
