How to Make Egg Roll Manicotti

This dish is super easy to make with only a few simple ingredients. Spray a 9×13-inch baking dish with nonstick cooking spray and set aside. In a bowl, stir together ricotta cheese, mozzarella cheese, grated parmesan cheese, garlic powder, and dried parsley – season with kosher salt and black pepper to taste.

  • Preheat oven to 375ºF. Spray a 9×13-inch baking dish with nonstick cooking spray.

  • In a large bowl, combine ricotta, 1 cup mozzarella, parmesan, egg, garlic powder, and parsley. Fill each egg roll with 3-4 Tbsp of filling and roll.

  • Pour a little sauce on the bottom of the prepared dish. Place rolled manicotti seam side down in the dish. Top with remaining sauce and 1 cup shredded mozzarella cheese.
