Burdock root is known as gobo in Japan and is used in stir-fries, kimchi, and sushi. When I first discovered Burdock Root, I also first became interested in sushi, about 20 years ago. I would order small plates of those carrot-like sticks that were in my sushi rolls. I loved the crunch and the taste. My body craved Gobo.
I began to wonder why my body intuitively craved Gobo, and then I looked up; What is Gobo? That’s when I discovered that gobo was called burdock root. I started reading up on the benefits and soon understood why I was obsessed with it. However, sushi restaurants started to stop using gobo, so I wanted to learn how to make it myself. I came up with a recipe for burdock root pickles with Master Tonic.

Use of burdock root
Burdock root is extremely nutritious and including it in your diet brings many benefits to the health of the body. There are many ways to incorporate burdock root into your diet. You can use burdock. Root in a tincture or essential oil, or take crushed burdock root in capsules. You can make burdock root tea. It can be added to stir-fries or sautéed. Some studies have found that fermented burdock root is the healthiest option. My favorite way to consume burdock root is with burdock root pickles. I created my own recipe using the Master Tonic. . The combination of Master Tonic and burdock root makes these cucumbers an immune-boosting superfood, along with many other nutrient-rich benefits.
Burdock root pickle recipe with Master Tonic
Ingredients:
- Burdock root
- Water
- Master Tonic
- Aminos or Tamari
Directions:
- Wash and scrub burdock root. Although you can peel them, you lose some flavor and the peel always contains additional nutrients.
- Cut the burdock root into sticks about 5 cm long.
- Add about an inch of water to a pan. Place sliced burdock root in a steamer basket. Cover and steam for 5 minutes. You want them to still be crispy.
- Fill a pint-sized jar with the burdock slices, 3/4 full with Master Tonic and a few tablespoons of Aminos or Tamari.
- Fill up the rest with the boiling water.
- Put on a tight-fitting lid and refrigerator. They become tastier every day!
Preparing burdock root pickles is very easy and only takes a few minutes. I always have a jar in the fridge for a quick snack. I also chop them up and add them to salads or ramen. Let me know in the comments below if you make them and what you think. Enjoy!!
