My life changed the day I discovered you can make the most delicious and spongy soft cakes in the air fryer, and it’s way faster than making them in an oven. 

And this Air Fryer Strawberry Muffin is my latest obsession! Imagine sweet and tart strawberries in a spongy, fluffy muffin with a crunchy, crinkly top – this one’s addictive and a total must try this strawberry season!

  • Use fresh, sweet strawberries for the best flavor and texture
  • Do not overmix the batter as that can lead to dense muffins. Just fold the ingredients until everything is well incorporated 
  • Optional but recommended – sprinkle sugar on top before baking for an extra-crunchy, golden muffin top.
  • These muffins are perfect on their own, but you can top them with strawberry cream or vanilla ice cream for a more indulgent treat.

Can I make this into a cake?  

Absolutely! Simply line and grease an 8 inch cake tin and pour the entire batter in it to make a strawberry cake. Use the timing and temperature from this recipe

What else can I use instead of strawberries? 

Swap for any berries of your choice like blueberry, blackberry, etc. Choco chips work great too! 

Can I use frozen strawberries to make this? 

Yes, why not. Thaw frozen strawberries and drain excess liquid before adding to the batter. Frozen strawberries may break when mixing, but don’t worry about it. 

Can I use whole wheat flour instead of all purpose flour?

You can, but it will change the taste and texture slightly.

  • Mix milk & vinegar in a bowl & let it stand for 5 minutes till it’s curdled. Set aside.

    ½ cup lukewarm milk, ½ teaspoon vinegar

  • Preheat airfryer to 190C. Line 8 muffin moulds with muffin liners

  • Take a large bowl, add the prepared buttermilk and all the wet ingredients & whisk it well till everything combines. Add sugar & mix well.

    2 tablespoons melted butter, 2 tablespoons oil, 1 egg, 1 teaspoon vanilla

  • Keep a strainer on the bowl, add all the dry ingredients & sieve them well. Gently fold them into the wet mixture just until they combine. Avoid over mixing at this stage. The batter will be thick and slightly lumpy. Refer note 4

    ½ cup sugar, 1 ¼ cups maida, 1 ½ teaspoons baking powder, ½ teaspoon baking soda, ⅛ teaspoon salt

  • Gently fold in 1 cup of chopped strawberries into the batter.

  • Divide the batter among the lined muffin moulds. Top each muffin with the remaining chopped strawberries and almond slices. sprinkle sugar on top of each muffin.

    1 tablespoon sliced almond, 2 teaspoons sugar

  • Air fry them in the preheated air fryer at 190C for 13 – 14 minutes or until a toothpick inserted into the muffin comes out clean. Do not overcrowd the air fryer, and air fry them in batches if all muffins cannot fit in one batch.

  • Remove muffins from the airfryer, cool them on a rack and serve.

  • Leftovers, if any, should be stored in an airtight container in the refrigerator to avoid them getting stale.

  1. Fresh, ripe strawberries work best in this recipe & should be chopped into tiny pieces.
  2. Buttermilk is used for making these muffins super moist.
  3. Any cooking oil without a strong odour works well in the recipe, I have used sunflower oil.
  4. Batter should be thick & scoopable, but not runny and not dry like a dough.
  5. Air frying times may vary slightly depending on the settings of your airfryer.
